Lemon Cookies

Desserts are my favorite things to cook. This recipe has turned out a great success every time I used it. It takes some time to finish but in the end is totally worth it. The husband loves these cookies. They keep well and make a great combo with coffee or tea. And it's another recipe from Pantagruel!
Ingredients (30 cookies)
- 1/2kg white flour (4 cups)
- 200g granulated sugar (7oz)
- 250g butter at room temperature (9oz)
- 2 eggs
- 1 small lemon
Instructions (Time: 2 hours)
Start by beating the eggs with the sugar and the zest of the lemon.
Add the lemon juice and the butter and mix well.
Add the flour and mix only until you have a homogeneous batter. Let it rest for 30 minutes.
Preheat the oven to 210ºC (410ºF). Sprinkle a baking tray with flour. Create small cookies with the help of a spoon and forming a ball with your hands.
You should have enough batter for 30 cookies.
Bake them in the preheated oven for 10 to 12 minutes. If they start to brown too quickly you should reduce the temperature.
Your house will smell heavenly.
